Once I first tasted homemade macaroni and cheese, I realized that the instant kits that come in a box are but a pale imitation. This rich and creamy macaroni and cheese with a tasty hint of spice makes a thick and hearty family dinner. Serve with a side of veggies to make it a well-rounded meal.

Homemade Macaroni and Cheese Recipe

serves six

Ingredients:

  • 1 pint milk
  • 1 pound cheddar (we like to use sharp cheddar)
  • 1/2 pound macaroni (or "casserole") elbows
  • 2 Tablespoons butter
  • 1/4 large onion
  • 1 large clove garlic
  • 1 Tablespoon black pepper
  • 1 teaspoon red pepper
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 eggs
  • breadcrumbs (enough to cover in a 1/2-inch layer)

Preparation Instructions:

1). Make a cheese sauce:

  • Grate the cheddar cheese. Set aside a large handful to top the casserole with at the end.
  • Heat the milk in a medium saucepan until it is almost boiling (this is called "scalding"), but do not let it come to a boil.
  • When the milk is hot, add the grated cheese (except for the reserved topping portion) a little at a time while stirring with a fork or whisk to ensure that the cheese sauce is as creamy as possible.
  • Once all of the cheese is melted, reduce heat to low and add black pepper, red pepper, paprika, and salt.

2). Bring a large pot of water with a dash of salt to a boil. Add the macaroni elbows and boil until done (see instructions on package for time suggestions).

3). Meanwhile, preheat the oven to 350 degrees Fahrenheit (175 degrees celsius), then dice the onion. Crush the garlic with the flat of the knife and then finely mince it.

4). Drain the noodles, then toss them with the butter until the butter is melted and the noodles are evenly coated. Add the diced onion and minced garlic. Beat the two eggs until smooth. Add the cheese sauce and eggs, and mix well until the noodles are evenly coated.

5). Grease a casserole dish large enough to fit the mixture and still leave at least an inch of space at the top. Pour in the noodle mixture.

6). If you are making your breadcrumbs from scratch, toast some bread until stiff and dry, and break it up into the desired texture of crumbs. Top your macaroni with the breadcrumbs in a 1/2-inch layer. Sprinkle the reserved grated cheese over the top.

7). Bake at 350 degrees Fahrenheit (175 degrees celsius) until the cheese is melted and the breadcrumbs are browned. This should take 40 minutes to an hour. Remove from the oven and allow it to cool for ten minutes. Serve with a vegetable side. Enjoy!
