Sweet Ginger Broccoli Stir-Fry Recipe with Tofu or Chicken
This delicious broccoli stir-fry uses a unique ginger orange sauce, giving it an attractive sweet and spicy flavor. This healthy stir-fry dish can be made with chicken or tofu so that it is vegan and vegetarian or meat friendly. Served over rice it is a very filling meal.
Sweet Ginger Broccoli Stir-Fry Recipe with Tofu or Chicken
serves two
Ingredients:
marinade:
- a generous splash of rice vinegar
- 1 teaspoon minced ginger
- 1/2 teaspoon orange zest
- 1 small dollop of Thai chili sauce
- 2 boneless chicken breasts OR 2/3 block of extra-firm tofu
- rice wine or cooking sherry up to the level of the meat/tofu
sweet ginger orange sauce:
- 3 Tablespoons rice wine or cooking sherry
- 1/2 cup fresh squeezed orange juice
- 1 teaspoon rice vinegar
- 2 teaspoons soy sauce
- 2 Tablespoons hoisin sauce
- 1 teaspoon sesame oil
- 2 tablespoons minced fresh ginger root
- 1/2 to 1 teaspoon Thai chili sauce
stir-fry:
- 2 heads of broccoli
- 1/2 of a medium-sized sweet onion
- 1 carrot
- 4-6 Tablespoons vegetable or peanut oil
serve over:
- rice
Preparation Instructions:
1).First, if you are using tofu, you will need to press and dry-fry it. Cut the tofu into 1/2 inch thick triangles. Gently press between woven cloths to remove excess moisture. Dry-fry in a Teflon pan over medium heat with NO OIL, pressing with a spatula frequently. It is done when firm and golden on both sides. 2). Stir together the marinade ingredients, adding the tofu. If you are using chicken, cut the breasts into bite-sized pieces and then put them in the marinade.
3). Wash and chop all of your vegetables. For the broccoli, use only the flowerets.
4). Once the meat or tofu has been marinating twenty minutes, start the rice cooking according to the instructions for the variety you are using.
5). Prepare the sauce by mixing all of the ingredients together well.
6). When the rice has only another five minutes left to cook, start the stir-fry. Heat a well-seasoned wok until smoking over medium-high to high heat (or use a large pan if you do not have a wok). Add about 4-6 Tablespoons vegetable or peanut oil to the wok, then add the drained tofu or drained meat and the vegetables. Stir-fry over high heat just until the broccoli is tender but still slightly crunchy. Cut the heat and toss the stir-fry with the sauce.
7). Serve over rice. Enjoy!
